Ingredients
1 cup quinoa
2 cups water
1 cup cooked lentils
1 diced red bell pepper
1 diced cucumber
1/4 cup chopped red onion
1/4 cup chopped fresh parsley
2 tablespoons olive oil
2 tablespoons lemon juice
Salt and pepper to taste
Preparation
Rinse quinoa under cold water. In a pot, bring 2 cups of water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
Fluff quinoa with a fork and let it cool.
In a large bowl, combine cooled quinoa, cooked lentils, bell pepper, cucumber, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to coat.
