Ingredients
● 8 oz chickpea pasta (in shape of your choice)
● 1½ cups canned white beans, rinsed and drained
● 1 cup cherry tomatoes, halved
● 1 cup cucumber, diced
● ½ red onion, thinly sliced
● 1 packed cup fresh basil, torn
● Zest and juice of 1 lemon
● 2 tbsp olive oil
● Salt and black pepper to taste
Preparation
1. Cook the chickpea pasta according to package directions. Rinse with cold water and
drain well.
2. In a large bowl, toss together pasta, white beans, tomatoes, cucumber, red onion, and
basil.
3. Drizzle with olive oil, lemon juice, and zest. Season to taste with salt and pepper.
4. Chill or serve immediately.
