Ingredients

  • 1 tablespoon olive oil

  • 1 chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon curry powder

  • 1 can chickpeas, drained

  • 1 can diced tomatoes

  • 2 cups spinach

  • Salt and pepper to taste

Preparation

  1. Heat oil in a pan. Add onion and garlic, cook until soft.

  2. Stir in curry powder, cook for 1 minute.

  3. Add chickpeas and tomatoes, bring to a simmer.

  4. Add spinach, cook until wilted. Season with salt and pepper.
