Ingredients
1 tablespoon olive oil
1 chopped onion
2 minced garlic cloves
1 tablespoon curry powder
1 can chickpeas, drained
1 can diced tomatoes
2 cups spinach
Salt and pepper to taste
Preparation
Heat oil in a pan. Add onion and garlic, cook until soft.
Stir in curry powder, cook for 1 minute.
Add chickpeas and tomatoes, bring to a simmer.
Add spinach, cook until wilted. Season with salt and pepper.
