Apple Pie Overnight Oats

1/3 c. soy milk

1/3 c. Forager’s unsweetened yogurt

1 Tbsp almond butter

2 tsp maple syrup

2 tsp chopped walnuts

2 tsp dried cranberries

¼ tsp apple pie spice

½ c. old fashioned oats

½ medium apple, finely chopped


  1. Combine oats, soy milk, yogurt, almond butter, maple syrup, spices and apple in a small jar, stirring until well mixed.

  2. Cover and refrigerate 8 hours or overnight.

  3. Stir before serving and sprinkle with walnuts and cranberries.

Makes 1 serving
