Gingerbread Cookies



Ingredients:

  • 2 ½ cups all-purpose flour

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground ginger

  • 1 tsp ground cinnamon

  • ½ tsp ground cloves

  • ½ cup vegan butter, softened

  • ½ cup brown sugar

  • ½ cup molasses

  • 3 tbsp unsweetened applesauce

  • 1 tsp vanilla extract


Instructions:

  1. Mix dry ingredients (flour, spices, baking soda, salt) in a bowl.

  2. In another bowl, cream together vegan butter and brown sugar. Add molasses, applesauce, and vanilla; mix well.

  3. Gradually add dry ingredients to wet ingredients, mixing until combined. Chill dough for 1 hour.

  4. Roll out dough, cut into shapes, and bake at 350°F (175°C) for 8-10 minutes.

  5. Decorate with vegan royal icing if desired!


Makes 24 cookies.
