Ingredients:
2 ½ cups all-purpose flour
½ tsp baking soda
½ tsp salt
1 tsp ground ginger
1 tsp ground cinnamon
½ tsp ground cloves
½ cup vegan butter, softened
½ cup brown sugar
½ cup molasses
3 tbsp unsweetened applesauce
1 tsp vanilla extract
Instructions:
Mix dry ingredients (flour, spices, baking soda, salt) in a bowl.
In another bowl, cream together vegan butter and brown sugar. Add molasses, applesauce, and vanilla; mix well.
Gradually add dry ingredients to wet ingredients, mixing until combined. Chill dough for 1 hour.
Roll out dough, cut into shapes, and bake at 350°F (175°C) for 8-10 minutes.
Decorate with vegan royal icing if desired!
