
Ingredients:
2 ⅓ c Oat flour
1 ¾ c vital wheat gluten
7 tsp baking powder
7 tsp vanilla extract
14 packets/drops Stevia
4 ⅔ c water
7 c frozen strawberries
3 ½ c frozen blueberries
Instructions:
In a medium bowl, mix flour, vital wheat gluten and baking powder until well incorporated.
Add water, vanilla and stevia. Mix until just mixed. DO NOT OVER MIX!
Heat a waffle iron to temp before spritzing with non-stick cooking spray.
Pour one seventh of the batter (about 1 cup) into the waffle iron and close.
Cook until completion (~5 minutes if your iron doesn’t tell you).
In a small pot over medium heat, cook the strawberries and blueberries until they break down and become “melted”.
Store the fruit in the fridge and the waffles in the freezer.
Makes 7 servings.
