High Protein Vegan Waffles with Berries

Vegan Strong


Ingredients:

2 ⅓ c Oat flour

1 ¾ c vital wheat gluten

7 tsp baking powder

7 tsp vanilla extract

14 packets/drops Stevia

4 ⅔ c water

7 c frozen strawberries

3 ½ c frozen blueberries

Instructions:

  1. In a medium bowl, mix flour, vital wheat gluten and baking powder until well incorporated.

  2. Add water, vanilla and stevia. Mix until just mixed. DO NOT OVER MIX!

  3. Heat a waffle iron to temp before spritzing with non-stick cooking spray.

  4. Pour one seventh of the batter (about 1 cup) into the waffle iron and close.

  5. Cook until completion (~5 minutes if your iron doesn’t tell you).

  6. In a small pot over medium heat, cook the strawberries and blueberries until they break down and become “melted”.

  7. Store the fruit in the fridge and the waffles in the freezer.


Makes 7 servings.
