Sheet Pan French Toast with Berries

1 bottle of Just Egg

8 slices whole wheat bread

1 c. blueberries

1 c. sliced strawberries

⅓ c. orange juice

2 tsp vanilla

1 c. soy milk

1 Tbsp orange zest

½ tsp nutmeg (optional)


  1. Preheat your oven to 425* F.

  2. Coat a baking sheet with non-stick cooking spray.

  3. Arrange your bread slices on the pan.

  4. In a bowl, whisk together Just Egg, soy milk, ¼ c orange juice, orange zest, vanilla and nutmeg.

  5. Pour this mixture evenly over the bread slices.

  6. Bake for 10 minutes.

  7. Move to the top oven rack and broil for 1-2 minutes.

  8. In a small saucepan, heat the remaining orange juice, strawberries and blueberries over medium heat until the berries start to “melt”.

  9. Serve french toast topped with berry sauce.

Makes 4 servings.
