Sheet Pan French Toast with Berries

1 bottle of Just Egg
8 slices whole wheat bread
1 c. blueberries
1 c. sliced strawberries
⅓ c. orange juice
2 tsp vanilla
1 c. soy milk
1 Tbsp orange zest
½ tsp nutmeg (optional)
Preheat your oven to 425* F.
Coat a baking sheet with non-stick cooking spray.
Arrange your bread slices on the pan.
In a bowl, whisk together Just Egg, soy milk, ¼ c orange juice, orange zest, vanilla and nutmeg.
Pour this mixture evenly over the bread slices.
Bake for 10 minutes.
Move to the top oven rack and broil for 1-2 minutes.
In a small saucepan, heat the remaining orange juice, strawberries and blueberries over medium heat until the berries start to “melt”.
Serve french toast topped with berry sauce.
