Stuffed Seitan Holiday Roast 



Ingredients:

  • Seitan dough:

    • 1 ½ cups vital wheat gluten

    • ¼ cup nutritional yeast

    • 1 tsp garlic powder

    • ¾ cup vegetable broth

    • 2 tbsp soy sauce

    • 1 tbsp olive oil

  • Stuffing:

    • 1 cup cooked wild rice

    • ½ cup sautéed mushrooms

    • ¼ cup dried cranberries

    • 1 tbsp fresh sage, chopped

    • Salt and pepper to taste


Instructions:

  1. Mix seitan dough ingredients until a firm dough forms. Knead for 5 minutes.

  2. Roll dough into a rectangle and spread stuffing in the center. Roll up and seal edges.

  3. Wrap in foil and steam for 1 hour.

  4. Bake at 375°F (190°C) for 15 minutes, basting with vegan gravy or olive oil halfway through.


Makes 6 servings.

Nutrition per serving: 220 calories, 27g protein. 5.6g fat, 14/5g carbohydrates
