Ingredients:
Seitan dough:
1 ½ cups vital wheat gluten
¼ cup nutritional yeast
1 tsp garlic powder
¾ cup vegetable broth
2 tbsp soy sauce
1 tbsp olive oil
Stuffing:
1 cup cooked wild rice
½ cup sautéed mushrooms
¼ cup dried cranberries
1 tbsp fresh sage, chopped
Salt and pepper to taste
Instructions:
Mix seitan dough ingredients until a firm dough forms. Knead for 5 minutes.
Roll dough into a rectangle and spread stuffing in the center. Roll up and seal edges.
Wrap in foil and steam for 1 hour.
Bake at 375°F (190°C) for 15 minutes, basting with vegan gravy or olive oil halfway through.
