Sweet Chili Tofu Power Bowl
Ingredients:
Tofu & Marinade
1 block extra-firm tofu, pressed
2 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tbsp maple syrup or agave
1 tbsp chili garlic sauce or sriracha
1 tsp garlic powder
Bowl Base
1 cup cooked quinoa
1 cup edamame, shelled
1 cup steamed broccoli
1 cup steamed carrots
¼ avocado
Sweet Chili Sauce
2 tbsp rice vinegar
2 tbsp low-sodium soy sauce
2 tbsp sweet chili sauce
1 tsp cornstarch dissolved in 2 tsp water
Optional: chili flakes for heat
Instructions
Press the tofu for 10–15 minutes (optional).
Cut into 1-inch cubes.
Whisk marinade ingredients together. Toss tofu in marinade and let sit at least 10 minutes.
Air fry at 400°F for 12–15 minutes OR bake at 425°F for 20–25 minutes, flipping halfway, until golden and crispy.
In a small skillet, whisk together the sauce ingredients over medium heat.
Once it starts to bubble, stir until it thickens slightly.
Add quinoa, broccoli, and edamame as your base.
Top with crispy tofu, drizzle over the sweet chili sauce, and sprinkle sesame seeds on top.
Makes 2 servings.
