Chickpea Quinoa Protein Salad

Ingredients:
2 c cooked quinoa
1 15 oz can chickpeas, drained and rinsed
2 c chopped cucumber
2 c halved cherry tomatoes
¼ red onion, diced
¼ c fresh parsley, minced ¼
4 Tbsp tahini
6 Tbsp lemon juice
Salt, pepper
Instructions:
In a small bowl, whisk together tahini and lemon juice.
In a large bowl, toss all ingredients together, including the dressing.
Chill for 30–60 min if you can.
Add salt and pepper to taste.
Makes 4 servings. Nutrition per serving: 431 calories, 56g carbohydrates, 15g fat, 18g protein
