Ingredients:
1 cup cooked quinoa
1 cup extra fim tofu, cubed
2 cups cubed watermelon
1 cucumber, diced
1/4 cup mint leaves, chopped
Juice of 1 lime
Salt to taste
Instructions:
Toss all the ingredients together in a large bowl.
Serve chilled.
