Quinoa Watermelon Salad


1 cup cooked quinoa

1 cup extra fim tofu, cubed

2 cups cubed watermelon

1 cucumber, diced

1/4 cup mint leaves, chopped

Juice of 1 lime

Salt to taste


Toss all the ingredients together in a large bowl.

Serve chilled.

Makes 4 servings.
