Sweet Potato Soup

Ingredients:
1 large sweet potato, peeled and chopped
1 large carrot, sliced
3 medjool dates, pitted
½ avocado, peeled and pitted
2 garlic cloves
⅓ small jalapeno
⅓ medium red onion, diced
Instructions:
In a high-speed blender, add the sweet potato, carrot, dates, avocado, garlic, jalapeno, and two cups of water, and blend on low speed for about 1 minute. Gradually increase the speed to medium-high and blend for 2 to 4 more minutes until completely smooth.
Transfer the mixture to a medium saucepan and set over medium-high heat. Cook, stirring, until the soup is heated through, 5 to 7 minutes. (Alternatively, if your blender heat soups well, you can keep the soup in the blender and complete this step there.)
Garnish with onion and serve
Makes four servings.
